Sweet Pot Mash, Caramel Onion

It is our understanding that fat and salt are the most misunderstood ingredients in our pantry, shouldering most of the blame for all health complaints.
However we are not nutritionists so if you are not accustomed to hefting bricks of butter into your mash followed by lashings of miso, please do consult a source you trust for diet related advice.
Or equally think of this as a necessary antidote to the cold and wet weather.
Ingredients
- 2 Large sweet potatos
- 100g butter
- 1 large table spoon Oat Miso
- 1 Large onion
- 1 glug of oil
- 2 tbs Oat Shoyu
Directions
- Boil a full kettle of water.
- Peel and slice your sweet pots into chunks. (The size of the shape your index finger makes when it touches the tip of your thumb)
- Boil for 15 minutes, (keeping an eye not to make them too soft)
- When they are just falling apart, strain through a sieve.
- While they are hot add your 1/2 block of butter and tbs of Miso.
- Mash into a creamy consistency.
- Slice your onions finely
- Add to a hot pan with a glug of oil
- After you have a decent colour on them, add 2 tbs Shoyu and simmer with the lid on for 10 minutes.
