Roast veg: is there any better lunch?
When working at Rovi, Jono earned himself the nickname “Roast Veg” thanks to just how regularly he’d serve up a tray of roasted vegetables for staff food.
A nickname to be worn with pride! 😅
This is a simple, no-fuss version of one of his favourite lunches: sweet potato, red onion and peppers roasted until caramelised. Then finished with a generous dose of shoyu and hot sauce! (naturally). Easy, satisfying and perfect for eating with a good book.
Ingredients
- Sweet potato x 2 🍠
- Red onion x 3 🧅
- Peppers x 2
- Oil
Method:
- Slice all your veg into bite sized chunks.
- Roast your sweet potatoes and onions for 20 minutes at 180C with a glug of oil.
- Add your peppers for a final 10 mins or until everything is nicely caramelised.
- Dose with shoyu, hot sauce and enjoy with a book 📖.
There’s not much more to it than that. The vegetables do the hard work in the oven, while the shoyu brings a deep, savoury richness and the hot sauce gives everything a little kick.
Simple food, big flavour. And if you’re anything like Jono, you’ll probably find yourself making roast veg a lot more often than you intended. 🌶️🥕
