Pink Flamingo Humus

We had a dream about making a bright pink beetroot humus, then found the fridge to be full of golden beetroot…. Oui, big disaster. So rather than buy yet more red beetroot we opted instead for roasted beets upon a bed of pink flamingo pea humus. Not quite as show stopping but just as tasty. 🤤
Ingredients
- For the humus:
- Pink peas * 300g 🦩
- Oat Shoyu * 1 tbs 🌾
- Pink miso * 1 tbs
- Garlic * 1 clove 🧄
- Tahini 2 tbs
- Olive oil 2 tbs 🫒
- Water 50ml
To top:
- Golden beetroot, parsley, kimchi, chili oil.
Tools:
Some kind of blender
Method:
- Soak your peas the night before they will double in size.
- Roast your beets in the oven at 180 for 30minutes.
- Boil your plump peas for 30 - 40 minutes till soft (No salt in the water please).
- Soft meaning we should be able to squash one between thumb and forefinger without any effort. (The stage just before falling apart).
- Combine all your humus ingredients in a blender (we used a stick blender but a nutribullet / majimix would make life easier!) If you want to play on hard mode use a pestle and mortar 😅. Add a little more water if she is too thick. If you have a high powered blender you can add small ice cubes instead of water and you will get a smoother more silky finish.
- Top the humus with your roasted beets, kimchi, parsley and a drizzle of chili oil.
