Green Curry & Mushroom Shoyu

Sometimes you need a curry that’s packed with flavour but doesn’t require half the spice cupboard to make. This one is a beauty. The result is rich, savoury, spicy and properly umami, with the roasted vegetables bringing a lovely sweetness to balance everything out.

For this recipe we used their green Thai curry, Namprik and three star ⭐🌟⭐ mushroom “soysauce” (Soy free and gluten free).

Ingredients

Method: Rice

  1. Wash your rice 3 times / till the water runs clear and soak for 20 minutes.
  2. Strain through a sieve then weigh and add to a pan with 120% water.
  3. So if 300g is your soaked weight. Add 360g water. (Times by 1.2)
  4. Put on a medium heat in a covered pan and cook till you can smell that cooked rice smell (Approx 25 minutes). If you have a pot with a see through lid you can use your eyes as well as your nose 👃 to see when the water has evaporated.
  5. Turn off the heat and let her sit for 15 minutes…. we need to do a whole video just for the rice… Coming next week!
  6. (A rice cooker will change your life, they are well worth it… we need to get one)

Method: Sauce

  1. Slice your shallots and caramelise on a low heat.
  2. Mince your garlic and add after you have some good colour on the onions.
  3. Dice your sweet potato, pumpkin and green peppers into fork-able chunks.
  4. We roasted the pot and pumpkin together for 20-30  mins at 180C (355 F), adding the green pepper at the end so she kept some of here bite.
  5. Combine all your vegetables together in one pan with the curry paste and bring to a simmer.
  6. To serve divide your rice into bowls and dowse with your mushroom soy sauce, top with the curry, then follow with the crunchy Namprik. Be careful with the Namprik she has some heat!! ❤️ 🌶️
  7. Serve to someone you love. 🥰

The mushroom “soysauce” and Namprik are what really bring this one together. The sauce adds another layer of deep, savoury umami, while the crispy shallots give you that lovely contrast of texture.
