Miso-Glazed Salmon with Sesame Vegetables

This recipe combines the umami-rich flavour of miso with the omega-3 fatty acids of salmon, creating a nutritious and delicious meal. The sesame vegetables add a crunchy texture and nutty flavour that complements the glazed fish perfectly.
Ingredients: For the salmon:
- 4 salmon fillets (6 oz each)
- 2 tbs oat miso
- 1 tbs mirin
- 1 tbs sake
- 1 tbs oat shoyu
- 1 tsp honey
For the vegetables:
- 2 handfuls mixed vegetables (e.g., broccoli, carrots, snap peas)
- 1 tbs sesame oil
- 1 tbs toasted sesame seeds
Instructions:
- Preheat the oven to 200°C (400°F)
- In a small bowl, whisk together the miso, mirin, sake, shoyu, and honey to create the glaze.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze generously over each fillet.
- Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.
- While the salmon is baking, steam the mixed vegetables until tender-crisp, about 5-7 minutes.
- Toss the steamed vegetables with sesame oil and sprinkle with toasted sesame seeds.
- Serve the miso-glazed salmon alongside the sesame vegetables.
