Miso soup season is upon us!

The autumn has arrived and the brewery is running at full steam!

To warm your hearts and tummies we thought we should share our no nonsense beetroot soup:

When we say no nonsense we mean, roast the veg, boil the water and blend them both together with a big spoon of miso... soup should not be a back breaking endeavour! 

1 large beet (about 800g)

2 onions

1 bulb of garlic

1 Litre of boiling water (Less if you want it thicker!)

1 tbs of Organic Oat miso

Roughly chop and roast the veg at 190 for 25 mins.

Add to a blender with the miso, pour hot water into the roasting tray to get the caramelised bits.

Start blending and gradually add the water till your desired thickness.

(When the weather starts to get cold I quite like mine so thick I almost have to chew it).

Taste, add another tsp of miso if it needs more oomppff

Drizzle olive oil on the top and serve with oatcakes.
